Ofada sauce is a delicacy eaten by the yoruba people in Nigeria.It is a luxury for a lot of people as they go out to buy it from eateries, or wait to order it at our famous 'owambe' parties.Now what people dont understand is that it is one of the easiest sauces to make and it takes nothing more than an hour to cook. Now I would be taking you on the easiest way to make this sauce.
INGREDIENTS.
- Assorted meat(shaki, pomo, abodi, and whatever you want to add to it)
- Blended pepper( the combination should consist of onions, tatashe, atarodo, shombo)
- iru (also called locust beans)
- palm oil
- salt, dry pepper if needed, maggi.
Now, make sure the meat has been boiled properly and well seasoned, then you cut to desired size(not to small and not to big) SEE BELOW.
Pour palm oil into a deep pot, put on very low fire, and heat till it is thin and transparent or clear. Most times oil can cause a fire or too much choking smoke, so i always put a cover over it without leaving space for air to escape. dont do this for long 3minutes is okay.
I always turn off the fire and tilt the cover open for 10minutes to reduce smoke, then i put the meat inside. make sure the oil is not too shallow, it must be enough to make the sauce. Now you can light the fire again. still on low gas, you keep turning the meat so as to not stick to the pot. Fry meat till crispy and golden brown. remove the meat into strainer.
In that same oil, fry the pepper till it is dark red, put your iru (locust beans), put your salt to taste, and maggi. stir fry and add your meat. ( put a little bit of stock from the meat if you want. Not always necessary) Let it cook properly.
By the time its ready, it should look something like this. the palm oil on its top is also a delicacy, the sauce can be enjoyed with boiled yams, dundun(fried yams), boiled plantain, bread ,spaghetti, ofada rice, normal rice, plain beans,yam and potato porridge etc. I mean what cant it be eaten with?
